Easy Steamed Shrimp

  • 1.5 lb. of cleaned and deveined pink shrimp
  • Old Bay to taste
  • 2 cups of water

Add beer and old bay to water & bring to a boil; add shrimp; when water starts to boil again, cover and boil 3 minutes. You don’t want to overcook shrimp. Serve hot or cold with cocktail sauce and melted butter.


Shrimp Scampi

  • 1.5 lb. of cleaned and deveined pink shrimp
  • 3 tbsp. butter
  • 1/4 tsp. fresh garlic
  • 1 tsp. lemon pepper seasoning

Melt butter in skillet, add garlic and lemon pepper;
add shrimp and sauté until done (approximately 5-6 min.)

Serve over fresh pasta or rice with fresh lemon wedges.


Low Seafood Boil

  • 5 qts. of water
  • 1/2 c. Old Bay
  • 4 lb. small red potatoes
  • 2 lb. smoked sausage links
  • 6 ears of corn halved
  • 4 lb. unpeeled shrimp

Bring water to a boil, add Old Bay. Add potatoes, return to a boil and cook about 10 min. Add sausage and corn, return to boil. Cook another 10 min or until potatoes are tender. Add shrimp and boil about 3–5 min. or until they turn pink. Drain water and serve with fresh lemon wedges.


Snapper Piccata

  • 1 tbl. Olive Oil
  • 4 (6 oz.) Snapper Fillets
  • 1/4 tsp. salt & pepper
  • 1/2 C. dry white wine
  • 2 tbl. Fresh lemon juice
  • 2 tbl. Capers

Heat oil in nonstick skillet over med–high heat. Sprinkle fillets with salt and pepper and add to heated pan and cook 3–4 minutes each side or until they flake with a fork. Remove from pan and keep warm.

Add wine & lemon juice to pan and bring to a boil; reduce heat and simmer about 2 min., scraping the pan. Stir in capers and spoon sauce over fish.


Grilled Wasabi Dolphin

  • 4 (6-8 oz.) Dolphin Fillets
  • 4 tbl. Spoons of olive oil
  • 6 oz. finely chopped fresh ginger root (about 1/3 c)
  • 6 oz. finely chopped fresh horseradish root (about 1/3 c)
  • 1/4 c soy sauce
  • 2 tsp. fresh minced garlic
  • 6 tbl. Honey or brown sugar
  • 1 c mayonnaise

Brush Fish fillets with oil and place on grill. While fish is cooking, combine ginger root, horseradish and soy sauce and blend in food processor or blender until mixed. Add garlic, honey and mayonnaise and blend.

When fish is cooked (about 3-4 min. each side), remove from grill and top each fillet with a generous portion of the sauce. Place under broiler until sauce starts to bubble, about 5 min. Remove from heat and serve.


Panko Encrusted Fish

  • 4 (6-8 oz.) fish fillets (Snapper or Grouper work well)
  • 1 c panko breading
  • 1/2 c Parmesan cheese
  • 1/2 c of brown mustard (or mayonnaise works well too)
  • 2 tbl. Olive Oil

Heat olive oil in nonstick skillet. Add Parmesan cheese to panko breading. Rub fish fillets with mustard & then coat both sides with panko mix. Add to heated skillet and cook about 3–4 min. each side. Remove and serve with fresh lemon wedges.
